Favorite Thing #15 — Spinach and Bacon Quiche

This is my go to recipe for any gathering at my home, especially if it is morning-ish. The ladies in my RISE for moms group have eaten this quiche more times than I can count. And yet, no one seems to be complaining.

It is incredibly delicious and really is the best quiche recipe out there. It’s a recipe that I get asked for over and over. I can’t take any actual credit for the recipe, it is simply this Paula Dean recipe. I use Trader Joes’ frozen pie crust. It is yummy and very easy. Set it out an hour before you want to roll it out so that it can thaw and then just press it into the pan. Then follow Paula Dean’s recipe. I’ve even microwaved the frozen crust on low power for 30 seconds when I didn’t have time to wait for it to thaw and it worked just fine.

This quiche is easy to improvise. Last week I made it with sun-dried tomatoes, spinach, and goat cheese, simply because that was what was in my almost empty fridge. I’ve also done sausage and cheddar cheese which is one my kids prefer. This week I made it with kale instead of spinach and I used milk instead of cream. While I still prefer the full cream version, milk worked just fine.

One final tip is that I always bake my quiche longer than the recipe says. Maybe its my oven, but mine is not done in the time she lists. So just plan for this if you need it done by a certain time.

Do yourself a favor, just go ahead and print this one off and make it the next time you have company in the morning-ish hours. You will not be disappointed.
